My hubby LOVES Italian food but I love Mexican so I'm always on the hunt for easy Italian meals since they're not my specialty. After spotting Celeb Chef David Rocco's Fusilli + Meatballs, I knew I could re-create this...with way less work. [I'm a cheater, please don't tell him!] My version is all courtesy of #LaRomenella and honestly, it looks identical...minus all the work ;) Check out my shopping trip here!
INGREDIENTS:
- Fusilli (any noodle will work but fusilli is fun for kids since it's curly!)
- Four Cheese Pasta Sauce
- Italian Style Meatballs
- Garlic Bread *optional
DIRECTIONS:
- Boil 5 quarts of water per 1 lb of fusilli for 14 minutes. *Note: 1 tsp of salt added to the pot before fusilli is added gives a very flavorful noodle!
- While noodles are boiling, pour Pasta Sauce into sauce pan.
- Add chopped spinach for a punch of protein *optional: I keep frozen spinach on hand for this very reason, sneaky mom that I am ;)
- Let sauce simmer for 10 minutes.
- Saute meatballs over olive oil for 10 minutes.
- Drain noodles, combine sauce + meatballs.
That's it! It takes less than 20 minutes for a delicious dinner. My 4 kids loved it, as did my husband. I ♥ a yummy, shortcut recipe!
