Carrot cake with Xylitol

When I saw this delicious looking carrot cake recipe on The Girl Who Ate Everything, I couldn't resist making it for Easter dinner today... and have had to guard from my husband since from sneaking a slice ;)

So anyway, after frosting the cake I thought it needed something more... nest with eggs on top?  Maybe.  More cheeps?  Too much work.  Carrots?  Yep!

Turned out kinda cute :)

To make the carrots...
  • Bake an extra cupcake 
  • Crumble it in a bowl while it's still warm.  
  • Mix extra frosting in it until no longer crumbly.
  • Shape into carrot.
  • Pop them in the freezer to firm up a bit.  
  • Dip in melted chocolate with orange food coloring.
  • After cooled, arrange on cake. 
  • Pipe some green frosting on the top.
  • Add green sparkly sprinkles for extra yummy bling.

  5. The question I have is... Did using the Xylitol mess with the balance of the cake at all, or did it still bake up like sugar as well?

Great question Amanda Joy! 2 things I love about Xylitol is #1: the ratio for using sugar vs. Xylitol is 1:1 so no calculations required. #2: It baked just as my normal cake would... light & fluffy :) I should have posted a piece of cake :-/ but anyway it didn't mess with the balance of the cake at all! I wish I had a bigger sample so I could have ground it up to make powdered sugar for the frosting. Next time! ;)

    So cute and yummy looking! Such a wonderful tip on molding the carrots on top. I'll have to try this next time I want to decorate a cake!
